- 60ml Gin
- 35ml Pine Needle Syrup
- 20ml Lime juice
For the Pine Needle Syrup

- 1 1/2 cups water
- 1 1/2 cups caster sugar
- 1 cup chopped pine needles

Step 1

Step 2
First make the syrup. Place water and sugar in a saucepan over medium heat and bring to a gentle boil stirring until the sugar is dissolved. Remove from the heat and transfer to a glass bowl.
Allow the syrup to cool slightly and while the syrup is still a little warm, add the pine needles and allow to steep for 24 hours. After 24 hours, strain out the pine needles, bottle the syrup and store in the refrigerator.
Step 3
Fill a cocktail shaker with ice and add the cocktail ingredients. Stir vigorously with a cocktail spoon until the ingredients are ice cold. Strain into a chilled cocktail glass and serve with lime rind and a sprig of pine needles.
